Hannibal
Ingredients:
- Sauce:
- 2 Cups Sugar
- ¼ Tsp Cinnamon
- ¼ Tsp Nutmeg
- 1/8 Tsp Salt
- 2 Cups Water

- 6-7 Apples, Peeled and Cored
- Dough:
- 2 Cups All-purpose Flour
- 1 Tsp Salt
- 2 Tsp Baking Powder
- ¾ Cup Shortening
- ½ Cup Milk
- Topping:
- Brown Sugar
- Butter
- Cinnamon
- Nutmeg
Instructions:
Preheat oven 375 degrees. For sauce, combine sugar, spices, salt and water. Cook for 5 minutes after it comes to a boil. Add Butter at the end of the 5 minutes. For dough, sift together the dry ingredients and cut in shortening. Add milk gradually. Roll out and cut into six to eight 5-inch squares, ¼ inch thick. Place one apple on each square. For topping, sprinkle with brown sugar and spices. Fold corners and pinch edges together. Place one inch apart in a 9 X 13” pan. Pour sauce over dumplings. Bake for 35 minutes or until apples are tender.

Ingredients:
- 1-cup shortening, room temperature
- 1-cup brown sugar
- 1 1/4 cup molasses or honey, also room temperature (molasses will make the finished product darker)
- 1 T. cinnamon
- 1 T. ginger
- 5 to 5 1/2 cup flour
Instructions:
Note: This recipe is for making gingerbread to use in constructing a gingerbread house. The dough will be stiff and will require a very durable mixer. Adding one egg and one teaspoon of baking powder will produce a softer dough (to use for making cookies) and will not need as strong a mixer. Cream together the shortening, brown sugar and molasses/honey. Then add the cinnamon and ginger and mix for another minute. Add the flour one cup at a time to allow for thorough mixing. When all the flour has been added, mix the entire dough for 7 to 10 minutes. Lightly grease your cookie sheet and roll out the dough right on the cookie sheet. Bake for about 10 minutes at 350 degrees. (shorter time for smaller pieces, longer time for larger pieces). Halfway through the baking, lay your pattern pieces on the gingerbread and cut out the shapes, then continue the baking. After the cut pieces have cooled on the sheet long enough to handle, transfer the pieces to a wire rack and cool for 3 hours before assembling and decorating. Frost with Royal Icing.

- 1 Cup Sifted Flour
- 1 Cup Coconut
- 1/2 Cup Butter, Melted

- 2 Tbls Powdered Sugar
- 1/2 Tsp Baking Powder
- 2 Eggs
- 1 Cup Sugar
- 1/4 Tsp Salt
- 1/4 Cup Flour
- 3/4 Pecans, Chopped
- 1 Tsp Vanilla
- 1 Tsp Lemon Juice
Instructions:
Preheat oven to 350 degrees Mix together 1 cup flour, butter and powdered sugar until smooth. Spread evenly in bottom of 8 X 8 X 2 inch pan. Bake 15 to 20 minutes. Stir remaining ingredients (except pecans) into slightly beaten eggs. Spread over top of baked cookie base and top with pecans. Bake about 25 minutes more. Cool. Cut into 3 X 1 inch bars. Makes 20 bars.

- 1 cup medium brown sugar
- 1 tablespoon butter
- 2 egg yolks
- 2 tablespoons flour
- 1 cup milk
- 1 teaspoon vanilla
- 9 inch pie crust, baked
Instructions:
Mix together sugar, butter, egg yolks, and flour. Stir in milk. Cook in double boiler until thick. Remove from heat and add vanilla. Let the filling cool and then put it in piecrust, and cover with meringue made of whites of 2 eggs, and 2 teaspoons of sugar. Brown in 350-degree oven for 15 minutes. Serves: 6-8 Date of Recipe: 1925

This recipe was provided by the Johnson County Historical Society in honor of the Warrensburg sesquicentennial.
Champagne Zabaglione

Ingredients:
- 8 large egg yolks
- ½ cup sugar
- pinch salt
- ¾ cup champagne
- 1 cup heavy whipping cream
Instructions:
In a stainless steel bowl whisk together the egg yolks, sugar and salt until pale and very thick. Whisk in the champagne. Fill a large bowl one-quarter full of ice water and set aside. In a large pot bring water to a boil. Lave the bowl of egg mixture over the oiling water and whisk vigorously for about 5 minutes, until mixture is thick and tripled in volume. The zabaglione should mound when dropped from the whisk. Immediately put the bowl over the ice bath and whisk until cold. In another bowl whip the whipping cream until soft peaks form. Fold the cream into the zabaglione. Refrigerate until ready to serve. Serves: 5 cups

- 1 ½ cups sugar, divided
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- ¼ teaspoon salt
- 12 egg whites
- 1 ½ teaspoons cream of tartar
- 1 ½ teaspoons vanilla extract
Instructions:
Preheat oven to 350 degrees. Grease and flour an angel food cake pan. In a mixing bowl sift together ¾ cup sugar, flour, cocoa and salt. In another mixing bowl beat the egg whites with the cream of tartar. When whites are frothy add remaining 2/4 cup sugar and the vanilla. Beat until it forms stiff peaks. Fold in the flour mixture. Mix just until combined. Pour into prepared pan. Bake for 40 minutes until the top springs back when lightly touched. Immediately invert cake, leaving in pan. Cool thoroughly. Loosen sides of cake from pan and remove. Serves: 12

- ½ cup margarine
- 2 cups dark corn syrup
- ¼ teaspoon salt
- 1 tall can Carnation milk
- 1 teaspoon vanilla
- 2 bags medium size pecan halves
- milk or dark chocolate, melted to pour over caramel and pecans
Instructions:
On a greased, metal pan nest three pecan halves together. Stir sugar, margarine, syrup and salt until it boils clear and forms a thick mass. Gradually add Carnation milk, do not stop boiling. Cook to 232 degrees or to a firm ball stage (about 11 minutes), stirring constantly. Add vanilla, mix well and take off heat. Cover each nest of pecans with hot caramel mixture, let set in cool place until caramel is firm. Pour chocolate over caramel and pecans. Let cool. Date of Recipe: 1960s

- 2 ounces good quality bittersweet chocolate
- 3 tablespoons water
- 2 tablespoons brandy
- 5 eggs, separated
- ¾ cup powdered sugar, sifted

- Filling:
- 1 teaspoon instant espresso coffee powder or instant coffee
- 1 tablespoon boiling water
- 1 ¼ cups heavy cream
- 1 teaspoon sugar
Instructions:
Preheat oven to 350 degrees. Grease a 10 x 15-inch jellyroll pan and line with baking parchment. For the cake, in a double boiler combine chocolates, water and brandy. Cook over medium-high heat, stirring until melted. Remove from heat and set aside to cool. In a small bowl whisk the egg yolks with the sugar until pale in color. Fold in the melted chocolate mixture. Using an electric mixer whisk the egg whites with the salt to stiff peak stage. Fold a small amount of white mixture into the yolk mixture, to lighten the egg mixture, then gently fold in the remaining whites. Pour the mixture evenly into the prepared baking pan. Bake for 15 minutes. Remove from oven, and cool completely. For the filling, dissolve the coffee in the water. In a mixing bowl whip the cream to soft peaks, and then fold in the coffee and sugar. Turn the cake out onto a sheet of waxed or parchment paper dusted with powdered sugar. Peel off the parchment carefully by lifting the front corners and peeling it back toward you. Spread the filling evenly over the cake. Roll up the long side of the cake, jellyroll style, using the sugared paper to help. Discard the paper. Chill the roulade for several hours, seam side down before serving. Serves: 12-16

Melt chocolate in double boiler. Whip egg yolks, sugar and salt in bowl. Add water to egg mixture and put into melted chocolate, stirring rapidly. Cook until creamy (not thick like pudding). Take off heat and add vanilla. Fold in stiffly beaten egg whites. In a 9x13 pan put a layer of angel food cake, then ½ of chocolate mixture, another layher of cake and rest of chocolate mixture. - 1 ½ cups sugar

Instructions:
This old-style doughnut is rolled, cut, and twisted, then deep-fried to a golden brown. Like a cruller, they are great for dunking. Cream butter and sugar, and add beaten eggs.
Add sour milk and soda. Add flour to make a stiff dough. Roll on a floured surface to ¼” to ½” thick and cut into 3” x 5” rectangles. Cut two or three lengthwise slits in croquignoles and twist the dough through the slits. Fry in deep hot fat and drain. Srinkle with powdered sugar if desired.

- 1 1/2 cups granulated sugar (divided use)

- 4 egg yolks
- 1/2 teaspoon grated lemon rind
Instructions:
1. Preheat oven to 375°. 2. Sift flour and 1/2 cup sugar together. 3. Combine egg whites and salt; beat until foamy. Add cream of tartar and beat to soft peaks. Gradually beat in remaining 1 cup sugar until egg whites are stiff. 4. Fold the flour-sugar mixture into the egg whites, adding the vanilla. 5. In a separate bowl, beat egg yolks with the lemon rind until thick and light. Fold half the egg white mixture into the egg yolks. 6. Instructions:
This distinctly flavored cake has its origins in Louisiana, where sugar cane is grown and cane syrup is still produced. Specialty stores may carry cane syrup. In a large bowl, combine sugar, oil, and syrup. Stir well. Add soda to boiling water. Add soda and water to mixture in bowl and mix well. Add cinnamon, ginger, nutmeg, and flour. Beat until thoroughly mixed. Fold in eggs. Bake at 350 degrees in a well-greased 8 x 10-inch pan for 40 minutes.

Can be frozen for later use. Serving suggestion: Warm in microwave slightly above room temperature and top with fresh whipped cream.

Grandma Georgia's Famous Milk Pie

Slice tomatoes ¼ inch thin, place in salt water for 15 minutes. Then rinse in clear cold water. Drain. Mix flour, sugar, and cinnamon. Layer tomatoes then add mixture. Repeat layers. Sprinkle in lemon juice on bottom crust. Sprinkle nutmeg over all, dot with butter. Put on top crust, sprinkle with sugar again. Honey Almond Crème Brûlée

Ingredients:
- 4 cups heavy cream, divided
- ½ cup honey
- 8 egg yolks
- 1 cup sugar, divided
- 2 whole eggs
Instructions:
Preheat oven to 325 degrees. Heavily coat soufflé cups or other ovenproof glass containers with cooking spray. In a saucepan, warm 2 cups of the cream with honey. In a mixing bowl, mix the other 2 cups of cream with the eggs and ½ cup of the sugar. Temper egg mixture with hone mixture. Let sit until foam forms on top. Skim off foam and place in soufflé cups. Place cups in a baking pan and fill half way up the sides with tepid water. Bake for one hour or until knife inserted in center comes out clean. Allow to cool, then place in refrigerator. When ready to serve, preheat the broiler. Sprinkle 1 tablespoon of sugar on top of each brûlée. Place the cups on a heavy baking sheet and broil for 2 minutes or until the tops have browned. Watch carefully, as the sugar can caramelize quickly. Serve immediately. Serves: 8

Marcel Proust made these delightful “little cakes” famous in French literature. They are still made today by bakers in Commercy, France. Warm sugar and beaten eggs in a saucepan over low heat until lukewarm.
Pour egg mixture into a mixing bowl and add flour. Beat until smooth and slowly add cooled butter. Add vanilla, lemon extract, and rum. Stir batter, cover and let rest for one hour. Butter and flour madeleine pan molds and preheat oven to 375 degrees. Spoon stiff batter into molds, and bake for 12-15 minutes until edges are lightly browned. Cool humped side up on a rack. Makes 24 madeleines.

Meringued Pecans

- 1 stick margarine
- 5 cups pecans
Instructions:
Preheat oven to 325º F. Place one stick of margarine on a lipped cookie sheet and put in oven to melt. Remove from the oven when the margarine has just melted, to prevent burning. Beat two egg whites until frothy. Slowly add one cup of sugar into egg whites and beat until stiff. Stir in 5 cups of pecans into the egg meringue until coated. Spread the mixture across the melted margarine in the cookie sheet in one layer. Bake 15 minutes, then turn with pancake flipper. Do not stir, but try to turn in sections to keep meringue on pecans. Brown on opposite side, then set to cool.

- 2 cups sugar
- ½ cup evaporated milk
- 2 cups uncooked oatmeal (quick kind)
- ½ cup peanut butter
- 2 teaspoon vanilla
- ½ cup margarine
- 2 squares chocolate (unsweetened)
Instructions:
Mix together the sugar, margarine, chocolate and evaporated milk. (You’ll need to use a heavy spoon to stir this concoction). Cook over medium heat. Stir until it gets “nice and bubbly” on the top. Cook for an additional minute, then add the oatmeal, peanut butter and vanilla. Mix and beat the dough until it begins to hold shape. Allow to cool slightly, but as soon as possible roll into small, round balls (about and inch in diameter.) Place on wax paper and allow to cool. Helpful Hints: You may substitute 5 to 6 tablespoons of unsweetened cocoa for the squares of chocolate. This is a candy that will keep up to two weeks unfrozen. Instructions:
Combine all ingredients (except bread) and mix thoroughly in large mixing bowl. Add cubed bread and allow to soak. Press mixture into a greased 9 x 12 baking pan (milk mixture should be visible when pressing). Bake covered at 400 degrees for aprox 45 min, until center is cooked and not custard like. A topping may be made from Brown Sugar, Vanilla Flavoring and fresh Banana slices.

This flavorful gingerbread is well suited for cut or molded cookies. Use an old cookie cutter, or design your own style gingerbread people, and cut them out with a paring knife. Add features with a sharp point to complete the figures. Heat the brown sugar, molasses, ginger, and cinnamon to the boiling point. Remove them from the heat, add baking soda, and pour the mixture over the butter in a mixing bowl. Stir until the butter melts, then add the egg and flour. Mix thoroughly. Kneed the dough for a few minutes, then gather it into a ball. Refrigerate until it is firm enough to roll easily. Roll on a lightly floured surface and cut out cookies. Bake on a greased cookie sheet at 325 degrees for 8-10 minutes. Makes about 3 dozen.

Dissolve gelatin in ½ cup of water, and sherry (on stove). Add baking powder. Beat yolks and sugar lightly, add cook until it thickens, cool. Add ground macaroons and crushed nuts and cherries, then quickly add beaten whites. Serve with sweetened whipped cream. Add ½ pint whipped cream and freeze as ice cream, if desired. - 1 9-inch baked pastry shell
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 2/3 cup sugar
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 2 cups whole milk
- 2 Tablespoons butter
- 1/4 teaspoon vanilla extract
- 3 egg yolks, beaten
- 3 egg whites
- 2 Tablespoons sugar
Instructions:
Combine peanut butter and powdered sugar. Mix with a fork until it resembles corn meal. Spread half the mixture in the bottom of the baked pastry shell. Set the other half aside. In a saucepan, stir together 2/3 cup sugar, salt and cornstarch. Add the milk, butter, vanilla and beaten egg yolks. Cook over medium heat, stirring constantly, until thickened. Pour filling over peanut butter layer in pastry shell. Beat egg whites (gradually adding 2 Tablespoons sugar) until stiff. Spread over filling. Sprinkle the remaining peanut butter mixture over the meringue. Bake at 325 degrees for about 20 minutes, until meringue is browned and firm. Cool before serving. It is delicious served warm or cold! Enjoy!

Instructions:
In a heavy saucepan, boil sugar, evaporated milk, and corn syrup to soft ball stage (236 degrees). Remove from the heat and add the butter, whiskey, and vinegar. Do not stir. Cool to 150 degrees. Stir in the nuts and beat until the candy begins to thicken, but is still glossy. Mound by spoonfuls onto greased cookie sheet and cool. Store in an airtight container. Makes about 4 to 5 dozen.

- 3/4 to 1 Cup Sugar

Instructions:
Preheat oven to 300 degrees. Grease two 9-inch cake pans. Using an electric mixer cream the cream cheese until smooth. Add the sugar and mix well. Add the cornstarch and mix well, scrapping the bottom of the bowl. Add the eggs, one at a time, mixing after each addition. Add the sour cream and raspberry purée and mix well. Pour into cake pans and bake 50 minutes until set and lightly golden on top. Cool completely. Line a baking sheet with parchment paper. Using a 1 ½ -inch to 2-inch scoop, scoop small balls and place on sheet pan. Stick a chocolate cigarette in each of the scoops and freeze until hard. Remove from freezer and dip each lollipop in melted chocolate up to the chocolate stick, drag against the side of the bowl to remove excess chocolate and place back on parchment-lined baking sheet. Return to the freezer until ready to serve. Serves: 30

Instructions:
Preheat oven to 375 degrees. In a large bowl sift together 2 cups flour, baking powder, salt and ½ cup sugar. Mix well. Blend in ¼ cup butter with forks or pastry blender until small crumbles appear. In a small bowl combine cream and egg, then add to the flour mixture and stir just to incorporate. Do not overmix. Place raspberries in a large bowl, sprinkle evenly with remaining 2 tablespoons flour, just to cover. Fold berries into batter. Mix gently to combine. Do not overmix. Turn out onto lightly floured surface and knead 4 to 5 times. Pat out to ¾-inch thick. Cut into circles using a biscuit cutter and place on an ungreased cookie sheet. Drizzle top of each scone with melted butter and sprinkle with remaining sugar. Bake for 18 to 20 minutes, until golden brown on top. Remove from oven and cool slightly on rack before serving. Stir in syrup, molasses, salt, nutmeg and egg; mix well. Pour 1/3 of mixture into unbaked piecrust. Sprinkle 1/3 of the crumbs over mixture. Continue process until both mixtures are used. Bake in heated 375 degree oven for 10 minutes, then lower oven to 350 degrees and bake for 30 minutes.

- Pastry for 8” pie shell
- 1 ½ quarts tart apples, sliced and peeled
- ¾ cup light brown sugar
- 2 tsp. lemon juice
- 3 tbs. water
- 1 tsp. nutmeg
- 1 large egg plus one egg yolk, beaten
Instructions:
This old-style tarte is thin and combines a cooked apple base with a sliced apple top. Fruit trees often surrounded the gardens of a French habitation. Cover and cook 1 quart of apples with ½ cup sugar, lemon juice, and water until apples are very tender. Uncover and cook until mixture is smooth and thick. Let mixture cool. Stir in the nutmeg and beaten eggs. Turn into pie shell and smooth top. Arrange the remaining apple slices artfully on top of the cooked apple mixture. Trim excess pastry dough. Sprinkle the remaining sugar on top of the arranged apples. Bake at 325 degrees for about 1 hour 45 minutes or until apples are tender and crust is brown.

Tiramisu

Ingredients:
- 30 ladyfingers, divided
- 2 ½ cups warm strong espresso
- 2 ounces semi-sweet chocolate, chopped, divided
- cocoa, for dusting
- 6 egg yolks
- ¾ cup plus 1/3 cup sugar
- 1 ¼ pounds mascarpone cheese
- 2 cups heavy cream
- 1 ½ tablespoons dark rum
Instructions:
Dip 18 of the ladyfingers in the espresso and use them to line the bottom of a 9 by 13-inch baking pan. Sprinkle half of the chocolate and generous dusting over the ladyfingers. Set aside. In a mixing bowl combine the egg yolks and ¾ cup sugar and mix with an electric mixer on high, approximately 10 minutes. By hand, mix in the mascarpone until incorporated and relatively lump free. Set aside. In a mixing bowl whip the cream, the 1/3 cup sugar and the rum until stiff peaks are formed. Add the mascarpone mixture and whip again until thoroughly mixed. Spread half of the filling on top of the ladyfingers. Soak the remaining ladyfingers in the espresso and make a second layer, leaving space in between the ladyfingers. Sprinkle with the remaining chocolate and another dusting of the cocoa. Spread the remaining filling evenly over the ladyfingers and lightly sprinkle with cocoa. Cover and refrigerate for six hours or overnight. Before serving, sprinkle with a dusting of cocoa. Serves: 12-16

USS Missouri Buttermilk Pie

Ingredients:
- 2 Cups Sugar
- 1/2 Cup Butter, Softened
- 3 Eggs
- 3 Tablespoons All-Purpose Flour
- 1/4 Teaspoon Salt
- 1 Cup Buttermilk
- 1 9-inch Unbaked Pie Crust with Edges of Crust Crimped High
- 1/2 Cup Chopped Pecans, toasted
Instructions:
In a large mixing bowl, gradually beat the sugar into the softened butter with an electric mixer, beating till mixture is well blended. Beat in the eggs, one at a time, beating well after each addition. Combine the all-purpose flour and the salt. Gradually beat these dry ingredients into the butter mixture. Beat in the buttermilk till mixture is well blended. Pour the egg-and-buttermilk filling into the pie crust. Srpinkle the toasted pecans over the top of the filling in the pie crust. Bake the pie in a 300 F oven for one hour and 15 to 20 minutes or till the buttermilk filling is set. Cool. Store the pie in the refrigerator. Note: To toast the chopped pecans, spread them evenly in a shallow baking pan. Bake the pecans in a 350 F oven for 5 to 10 minutes or till they're browned, stirring the nuts once or twice during baking. Makes 8 Servings

Warrensburg Heritage Cookbook, Warrensburg
Ingredients:
- ½ cup butter
- 1 2/3 cup sugar
- 1 cup cold water
- 2 ½ cups flour
- 3 teaspoons baking powder
- 4 egg whites
- ¼ teaspoon almond flavoring
- 1 teaspoon vanilla
- Rind of 1 orange
- Juice of 1 orange
- 4 teaspoons butter
- Powdered sugar
Instructions:
½ cup butter 1 2/3 cup sugar 1 cup cold water 2 ½ cups flour 3 teaspoons baking powder 4 egg whites ¼ teaspoon almond flavoring 1 teaspoon vanilla Cream butter and sugar thoroughly. Add water and flour alternately, and mix. Add baking powder, almond, and vanilla flavorings. Add each egg white, and beat well after each. Bake in two layer pans for approximately 30 minutes in a 350-degree oven. Use orange filling between layers, and ice with white icing of your choice. Rind of 1 orange Juice of 1 orange 4 teaspoons butter Powdered sugar Grate rind of orange. Combine with butter and enough orange juice, and powdered sugar to make desired consistency.
Chesterfield
The town of Warrensburg is perhaps best known as the site of the famous “Old Drum” speech made by Senator George Graham Vest in 1869. Old Drum was the beloved dog of a Warrensburg citizen, and Senator Vest famously eulogized the pet by saying that “man’s best friend is his dog.” A monument to Old Drum now stands on the lawn of the Warrensburg courthouse. This recipe was provided by the Johnson County Historical Society in honor of the Warrensburg sesquicentennial.
