Cheese Bread

Warrensburg
Ingredients:
- 1 egg
- 1 ½ cups milk
- 3 ¾ cup biscuit mix
- 1 ½ teaspoon salt
- 1 cup (1/4 lb.) shredded cheddar cheese
- 1 tablespoon instant minced onion
- 1 tablespoon poppy seed (poppy seeds may be omitted)
Instructions:
Preheat oven to 350 degrees (moderate). Grease the bottom of a loaf pan (about 9x5x3 inches) with oil or shortening. Greasing is optional if using a nonstick pan. Place egg and milk in a medium sized mixing bowl and beat until blended. Add the other ingredients. Stir to blend and beat vigorously for one minute. Pour batter into prepared baking pan. Sprinkle with poppy seed. Bake for 50 to 60 minutes or until the top of the loaf springs back when touched with your finger. Place on a rack to cool for 5 to 10 minutes before removing from pan. Slice and serve warm. Leftover bread is extra good sliced and toasted. Serves: 4-6 Date of Recipe: 1970

Cheesy Corn Bake

Fiorella’s Jack Stack Barbecue, Kansas City
Ingredients:
- 2 tablespoons butter
- 4 teaspoons all-purpose flour
- 1/8 teaspoon garlic powder
- ¾ cup milk
- 6 ounces sharp cheddar cheese, shredded
- 3 ounces cream cheese, cubed
- 3 (10-ounce) packages frozen whole kernel corn, thawed
- 3 ounces ham, diced
Instructions:
Preheat oven to 350 degrees. Coat a 2-quart casserole dish with cooking spray. In a large saucepan over medium heat melt butter. Stir in flour and garlic powder. Add milk all at once. Cook, stirring constantly, over low heat until thickened. Add cheeses and continue cooking, stirring until cheese is melted. Stir in corn and ham. Transfer mixture to casserole dish. Bake for 45 minutes. Serves: 10-12

German Potato Pancakes

Ingredients:
- 2 large eggs
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/3 cup finely minced onion
- 5 to 6 medium potatoes
- 2 tablespoons flour
- 3 tablespoons olive oil
Instructions:
Peel and grate the potatoes. Tightly squeeze the potatoes to release any excess moisture. In a large bowl, lightly beat the eggs with the salt and pepper. Mix onion and potatoes with flour and olive oil. Add the egg mixture and mix thoroughly. Brush olive oil on large cast iron skillet, heat until sizzling hot. Reduce heat and drop 1/3 cup of the mixture onto the skillet and spread about ¼ inch thick. Fry the pancake 2 to 3 minutes and turn. Fry on the second side 4 to 6 minutes or until golden brown. Serve with a spoonful of sour cream. Serves: 4-6 Date of Recipe: 1940

Old Drum was the beloved dog of a Warrensburg citizen, and Senator Vest famously eulogized the pet by saying that “man’s best friend is his dog.” A monument to Old Drum now stands on the lawn of the Warrensburg courthouse. This recipe was provided by the Johnson County Historical Society in honor of the Warrensburg sesquicentennial.
Hush Puppy

Ingredients:
- Five (5) Cups self-rising white corn meal mix*
- One (1) Large Green Bell Pepper, diced
- One (1) Large Onion, diced
- One (1) Tbsp. Ground Black Pepper
- One (1) Tbsp. Sugar
- One (1) Tbsp. Garlic Powder
- One (1) Tsp. Salt
- One (1) Cup Whole Kernel Corn, drained
- Buttermilk
- Two to three Jalapeno Peppers, pureed with seeds
- Three (3) eggs, beaten
- One (1) Cup Self-Rising Flour
Instructions:
Mix all dry ingredients. All onion, bell pepper, whole kernel corn, jalapeno pepper, and eggs. Mix well with enough buttermilk to make stiff batter. Drop by small scoops into oil heated to 310 to 325 degrees. Cook until golden brown and cooked throughout. Enjoy.
Leadington
East Prairie is located in southern Mississippi County near the confluence of two great rivers, the Mississippi and the Ohio. Living close to the rivers, and fishing being a popular sport, catfish has always been a major part of the diet of the residents of this community and the area. Catfish and hush puppies are considered standard fare at local fish fries. In 1970, a group of local volunteers joined together, and the legend of the “James Bayou Cookers” began. In those early years, the group fried fish in converted wringer washers with iron kettles fueled by propane gas tanks. Today, “the Cookers” use a 20-foot trailer with four permanently installed kettles designed for traveling and cooking. In 2002, they fried more than 15,000 pounds of catfish and countless golden brown hush puppies. The group continues to use their time and resources for community service projects and fund-raisers throughout southeast Missouri. The recipe is complimentary of hush puppy chef, Sid Drummond, and the James Bayou Cookers.

Ingredients:
- 2 Qts Dry Bread, Crumbled
- ½ Cup Cooked, Diced Carrots
- ½ Cup Onion, Chopped
- ½ Cup Celery, Finely Cut
- 3 Eggs, Beaten
- 1/3 Cup Sage
- ¼ Cup Parsley Flakes
- 3 Bullion Cubes Dissolved
- 3 Cups Hot Water
Instructions:
Cook onion and celery in bullion broth until done. Mix all ingredients together and bake 45 minutes at 350 degrees.

Ingredients:
- 1/2 Cup bacon drippings
- 2 Cups breaded okra
- 1/2 Cup yellow squash
- 1 Cup corn
- 1/2 Cup bell pepper (diced)
- 1/2 Cup onion (diced)
- Salt and pepper to taste
Instructions:
This traditional Ozarks recipe features a delicious blend of garden vegetables all cooked in one skillet! Our outdoor cooks prepare this in a five-foot skillet on an outdoor grill, but this recipe is scaled down for a family-sized meal. This Silver Dollar City favorite is also served with stir-fried chicken tenders for a complete meal in a skillet. Preheat a large skillet to very hot. Add bacon drippings, onions and bell pepper. Saute until soft. Add remaining ingredients and cook to desired doneness. * To add chicken: Stir-fry chicken breast tenders until done and add to the succotash mixture.
Pan Fried Okra

Ingredients:
- 1 lb. Okra
- ½ teaspoon salt
- ½ teaspoon pepper
- ¾ cup Lousianna Fish Fry (dry mix)
- Vegetable oil
Instructions:
Wash the okra. Clip tops off and discard. Crosswise, cut okra into thin slices about 1/3”. Combine the salt and pepper with the fish fry. Lightly coat the sliced okra with the mixture and fry in a medium to high heated vegetable oil or olive oil. Will have to turn with spatula occasionally. Drain and serve hot. Serves: 4-6 Date of Recipe: 1800’s

Scottish Shortbread

Ingredients:
- 1 pound butter, softened
- 1 ½ cups powdered sugar
- 1 ½ cups cornstarch
- 3 cups unsifted flour
- 1 cup finely ground pecans
Instructions:
Mix all ingredients until grainy. Place in slightly buttered large cookie sheet. Press with hands and then roll with roller. Bake in 250 degree oven until slightly brown, about one hour. When out of oven sprinkle lightly with granulated sugar and cool. Serves:10

Ingredients:
- Dough:
- 1 cup whole milk, scalded
- ½ cup Crisco shortening
- ½ cup sugar
- 1 teaspoon salt
- 1 package dry yeast
- 2 eggs beaten
- 4 cups white flour
- Topping:
- 1 cup sugar
- 3 teaspoons cinnamon
- ½ cup vegetable oil
Instructions:
Place the scalded milk in a large mixing bowl, add Crisco shortening, sugar, and salt. Mix and let stand until mixture is cool. Add dry yeast and beaten eggs. Now in the mixture you have, add slowly the flour, not sifted. Consider adding more as you knead the dough in a greased bowl and cover with a tea towel or paper towel. Let rise until double in volume. While dough is rising, prepare topping mixture; sugar, cinnamon and oil. Roll out dough flat, keeping in a rectangular shape like a jellyroll and spread it with the cinnamon mixture. Roll-up and cut into one-inch circle. Put each circle in each greased muffin pan cup (average size). Let rise again until doubled in size. Bake at 350 degrees for 15 minutes or until light brown. Serves: 12-15 Date of Recipe: 1950
